Tuesday night: Veggie Frittata
With three eggs, a little Parmesan cheese and almost two cups of veggies, this frittata was obviously Betty's idea. The flip halfway through the cooking time required a pep talk and lots of sound effects to make sure the golden brown goodness wasn't ruined. With a serving of simple baked chicken breast on the side, this turned out to be a great weeknight meal for two. The best part is we can change up the veggies each time to make a new flavor combination full of healthy nutrients!
